Banana Bread

Inspired by:  Favourite family breakfast treat


Banana Bread:  Makes one loaf or 3 mini loaves (T=tablespoon, t=teaspoon)

  • 4 ripe bananas
  • 1/2 cup (100g) of sugar
  • 1T of chia seeds soaked in 3T of water (let soak for 10 minutes) - this is the egg substitute
  • 1/4 cup (60ml) of oil (I use grape seed or canola) or alternate with apple sauce
  • 1T of pure vanilla extract
  • 1 1/2 cup (180g) of flour
  • 1t of baking powder
  • 1t  of baking soda
  • 1/4 t of salt
  • chopped walnuts (about 1/3 cup)- one large handful
  • chopped dark chocolate (about 1/3 cup) - one large handful

How to make it:

Preheat oven to 350°F (180°C)
Start by soaking the chia seeds (1T) in water (3T) for 10 minutes.


Put the ripe bananas (4) in a bowl and mash.


Add the sugar (1/2 cup-100g), soaked chia seeds (1T + 3T water), vanilla extract (1T), oil or applesauce (1/4 cup - 60ml) and combine well together using a whisk.


In a separate bowl or large measuring cup, mix together the flour (1 1/2 cups - 180g), the baking powder (1t), baking soda (1t) and salt (1/2t).

Combine the dry ingredients into the wet ingredients and add the chopped walnuts (1/3 cup) and chopped dark chocolate (1/3 cup) and mix until just combined (don't over mix).


Oil a loaf pan and pour the batter into it making sure it is evenly distributed.  Bake for about 40 minutes in the centre of the oven (turning the pan once for even colouring).  It is cooked when  a toothpick or knife inserted into the centre comes out clean.  Enjoy!
